The durum wheat Senatore Cappelli is an ancient cereal, ancestor of the present durum wheat, spread in Italy in the twentieth century and later replaced by more productive varieties.
After a long period of absence its cultivation has been resumed in some regions of the South, including Puglia, for its important nutritional qualities.
We support this tradition and are proposing a line of pasta in the 4 traditional Apulian sizes: orecchiette, strozzapreti, cavatelli and olive leaves.
